Our Vincotto is a specialty product produced by a family in southern Puglia according to a closely guarded recipe that is centuries old. In fact, this family has inhabited this part of Puglia for over 500 years! Vincotto is a very unique product made from a combination of Negroamaro and Black Malvasia grapes. The grapes are left to ripen and then dry in the intense sun while still on the vine. From here, they are placed on wooden trellises to allow for their natural flavors to intensify. Next, they are gently boiled for 24 hours until their initial volume is reduced to 20%. The result is an intense concentrated condiment that is somewhat sweet, tangy and full of flavor. Naturally rich in polyphenols and antioxidants, vincotto is a stunning compliment to aged cheese, dressings for fresh greens and vegetables as well as grilled meats and fish.
